"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

1/2 c. granulated sugar
1 Tbsp. dried mustard

Directions:
Wash and pick over the beans. Place in a large bowl and cover with 2 inches of water. Let soak overnight. Or, use the quick-cooking method; place the beans in a large deep pot. Add enough water to cover by 2 inches and bring to boil. Boil for 2 minutes, remove from heat and let stand for 1 hour. Drain the beans and place in a large pot. Add water to cover the beans by 2 inches and bring to boil. Simmer, covered, for 1 to 1 1/2 hours until tender; add more water if necessary. Drain. Preheat the oven to 300. In a 4 qt. casserole dish, combine the sugars, mustard, molasses, onions, ketchup, vinegar and salt. Stir in the beans. Cook the bacon in a skillet until partially done. Drain on paper towels. Stir into the beans, cover and bake for 2 hours. Bake uncovered for 1 hour.

Personal Notes:
Personal Notes:
I frequently substitute dried lima beans for the great northern beans.
