2 lb. dried great northern beans
1 c. dark brown sugar, firmly packed
1/2 c. granulated sugar
1 Tbsp. dried mustard
3/4 c. molasses
3 medium onions, chopped
3/4 c. ketchup
2 Tbsp cider vinegar
1 tsp. salt
1/4 lb. sliced bacon cut into 1 inch squares

Wash and pick over the beans. Place in a large bowl and cover with 2 inches of water. Let soak overnight. Or, use the quick-cooking method; place the beans in a large deep pot. Add enough water to cover by 2 inches and bring to boil. Boil for 2 minutes, remove from heat and let stand for 1 hour. Drain the beans and place in a large pot. Add water to cover the beans by 2 inches and bring to boil. Simmer, covered, for 1 to 1 1/2 hours until tender; add more water if necessary. Drain. Preheat the oven to 300º. In a 4 qt. casserole dish, combine the sugars, mustard, molasses, onions, ketchup, vinegar and salt. Stir in the beans. Cook the bacon in a skillet until partially done. Drain on paper towels. Stir into the beans, cover and bake for 2 hours. Bake uncovered for 1 hour.
