8 oz uncooked spaghetti or other pasta of choice
1 lb peeled, deveined shrimp
1/4 c chopped fresh basil
3 Tbsp drained capers
2 Tbsp extra virgin olive oil
2 Tbsp fresh lemon juice
1/2 tsp salt
2 c baby spinach

Directions:
Directions:
Cook pasta as directed on package. A few minutes before the pasta is cooked, add the shrimp to the boiling water. Drain both and put into large bowl. Add other ingredients (through salt). Serve on little bed of spinach.

I like a little more lemon juice. I also often add quartered raw mushrooms & artichoke hearts.
My mom tried this with sauted chicken instead of shrimp and found the chicken needs a little seasoning of its own (a lemon herb seasoning would work well).
