Stir fry:
1/2 tsp rice vinegar
2 tbs soy sauce
2 tbs dark brown sugar
1 tsp minced garlic
3 tbs vegetable oil
2 chicken breasts cooked and chopped finely
1 C water chestnuts minced
2/3 C canned straw mushrooms minced
3 tbs chopped green onions
Fried rice noodles (Mai Fun)

Special Sauce (refrigerate):
14 C sugar
1/2 C water
2 tbs soy sauce
2 tbs rice vinegar
2 tbs ketchup
1 tbs lemon juice
1/8 tsp sesame oil

Hot Sauce:
2 tbs water
1 tbs Chinese hot mustard
1-3 tsp garlic chili paste

Heat and cook the stir fry ingredients. Serve the chicken mix on a dish lined with fried rice noodles. Make lettuce cups by slicing head of iceberg lettuce through the middle. Wash and chill until crisp. Serve by filling lettuce cup with chicken mix and top with sauce and hot sauce.
