1 T. Cooking oil
1 lb. mild or hot Italian sausage
3 cloves garlic
2 c. chicken broth
1 head escarole
1 c. drained cannellini beans
1/3 c. Parmesan
1/2 tsp. salt
1/4 tsp. black pepper
3/4 lb. rigatoni

Directions:
Directions:
Heat oil over moderate heat in large frying pan. Add sausage and cook, turning, until browned and cooked through. Remove. Cut sausage in slices.
Put garlic and broth in pan and bring to simmer. Add escarole, cover, and simmer for 5 minutes. Gently stir in sausage, beans, Parmasan, salt, and pepper and simmer 1 minute longer.
Meanwhile, cook pasta. Drain and toss with sauce. Serve with additional parmesan.
