"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Rice Casserole, by Kate C, is from The EWEN Family Cookbook Project,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
2 cans Beef Consume Soup ( do not add water) 1 onion (chopped fine) 1 stick butter ( cut into small pieces) 1 cup Uncle Ben's Rice ( not instant)
Preheat oven to 350º. Mix all together and put into a 9x12 baking dish. Bake at 350 for 1/2 hour.
I also add chopped peppers or anything else I might have in the fridge.
This is a great party rice. I usually double this recipe and also I prepare it ahead of time and pop it in the oven just before serving. You can make it without vegetables and it still is good. The soup is the key ingredient. Make sure you get consume soup.
