Cake layer:
1 box yellow cake mix
3 eggs
3/4 cup cold water
3/4 cup vegetable oil

Ricotta layer:
2 lbs ricotta cheese
2 eggs, beaten well
1 cup sugar
2 tbls vanilla
fresh strawberries if available, otherwise thawed are OK.
Directions:
Directions:
Preheat oven to 350º.
Combine cake ingredients in a large bowl until moistened. Beat for 2 minutes at high speed.
Combine ingredients for ricotta mixture by hand, mixing until smooth.
Pour cake mixture into greased and floured 9x13 pan, spreading evenly. Pour ricotta mixture on top, spreading with spatula to cover evenly being careful not to mix into cake mixture.
Bake at 350 for 1-1/2 hours.

Refrigerate directly from oven. Top with fresh strawberries when cooled.

This was a typical dessert on Thanksgiving and Christmas. Grammy always made it for special occasions.
