Directions:
First, take the clean duck breast, skin removed, gizzards and guts removed, and take a fillet knife to slice down the sides of the breast bone, leaving you with two pieces of meat with no bones.

Rinse the two fillets and marinate them in Worcestershire and Italian dressing for a few hours.

I typically take them out, put a slice of cream cheese and a jalapeņo on top of the fillet and wrap the whole thing in bacon. Secure the bacon with a toothpick and throw it on the grill for a few minutes.

Jay is known from Baton Rouge to D. C. for his grilling skills and this is one of his best for Holiday Snacking or hunting camp fare! My favorite memory is the Christmas Eve that the electricity went out! Jay made his recipe by flashlights and candlelight. That was the same year he made the wine cork and tooth pick reindeer. Still one of my prized holiday decorations!
