1 3-4 pound trimmed beef tenderloin
Lemon pepper

Directions:
Directions:
Season beef tender with lemon pepper, and place bacon strips across the top of the beef

Place in preheated oven at 450 for 30 minutes then turn oven off. DON'T open the oven door until the oven is cool! This should be medium rare to rare in the middle.

I made this every year for our New Year's Eve dinner party and its absolutely foolproof. Its wonderful thin sliced and served on a pretty tray lined with frilly lettuce. I recommend serving it with sautéed mushrooms, Laura's Mashed Potatoes, and a salad.
