Ingredients: Crust: 2 c. graham cracker crumbs (about 16 double crackers) 1/2 c. butter, melted 1/4 c. sugar dash of cinnamon Filling: 2 (8 oz.) pkgs. cream cheese, softened 1/2 c. sugar 2 eggs 1/2 tsp. vanilla 2 c. sour cream 1/3 c. sugar Topping: (optional) 1 1/2 lb. frozen sliced strawberries ( 3 c.) 1 1/2 tsp. cornstarch 1 1/2 tbsp. sugar juice of 1/2 lemon

Directions: Mix ingredients for crust and line 9" springform pan with mixture, going 1" up sides. For filling, mix first four ingredients until smooth and pour into crust. Bake at 350º for 20 minutes. Mix sour cream and 1/3 c. sugar, pour over hot cheesecake and bake 10 minutes more. Cool to room temperature. For topping, thaw berries and drain well, reserving juice. Refrigerate berries. Stir together cornstarch, sugar, lemon juice and reserved berry juice. Bring to a boil stirring constantly until thick and clear. Cool, then combine with berries. Spread on top of cooled cheesecake. Chill at least 4 hrs. May be made a day ahead. |

Notes: This recipe has been part of our Christmas Day celebration for the past ten years and has also been requested for birthdays, graduations, bridal and baby showers. The topping is optional and I must confess never to have made it though it does sound very tasty. Given that the cheesecake is so deliciously decadent, the topping would only be gilding the lily. Be prepared to share the recipe when you serve this one!
