"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

1 c. creamy peanut butter
1/2 c. light brown sugar, firmly packed
1/2 c. plus 1 Tbsp. granulated sugar (divided)
1 large egg
1 tsp. vanilla extract
1 c. all purpose flour
1 tsp. baking soda
1/4 tsp. salt

Preheat oven to 375. Lightly grease cookie sheets.
Beat together butter, peanut butter, brown sugar and 1/2 c. granulated sugar with an electric mixer on medium speed until creamy. Stir in egg and vanilla. Scoop dough onto prepared cookie sheets, 1 rounded Tbsp. at a time, about 2 inches apart. Press cookies flat with the back of a fork dipped into remaining 1 Tbsp. sugar. Bake 12 minutes or until golden brown around edges. Spread creamy Peanut butter filling onto flat side of cookies and top each with another cookie, flat side down to make a sandwich.

Creamy Peanut Butter Filling:
2 3 oz. pkg cream cheese
1/2 c. creamy peanut butter
5 Tbsp. powdered sugar
Beat all ingredients until smooth.
