8 Tbsp. unsalted butter, softened
1 c. creamy peanut butter
1/2 c. light brown sugar, firmly packed
1/2 c. plus 1 Tbsp. granulated sugar (divided)
1 large egg
1 tsp. vanilla extract
1 c. all purpose flour
1 tsp. baking soda
1/4 tsp. salt

Directions:
Preheat oven to 375º. Lightly grease cookie sheets.
Beat together butter, peanut butter, brown sugar and 1/2 c. granulated sugar with an electric mixer on medium speed until creamy. Stir in egg and vanilla. Combine flour, salt and baking soda in a separate bowl. Slowly stir flour mixture into peanut butter mixture until fully incorporated. Scoop dough onto prepared cookie sheets, 1 rounded Tbsp. at a time, about 2 inches apart. Press cookies flat with the back of a fork dipped into remaining 1 Tbsp. sugar. Bake 12 minutes or until golden brown around edges. Spread creamy Peanut butter filling onto flat side of cookies and top each with another cookie, flat side down to make a sandwich.

Creamy Peanut Butter Filling:
2 3 oz. pkg cream cheese
1/2 c. creamy peanut butter
5 Tbsp. powdered sugar
Beat all ingredients until smooth.
