1 can garbanzo beans, drained (save juice)
2 - 4 tbsp. sesame tahini
2 - 3 cloves of garlic, chopped
3 tbsp. lemon juice
Salt and pepper to taste
Roasted red peppers (optional)
Dried or fresh dillweed (optional)
up to 1/4 tsp. sesame oil (optional)

Puree all ingredients in a blender or food processor adding enough bean juice to make a smooth, scoopable dip. For a richer (a.k.a. more caloric) flavor, drain beans and use olive oil instead of juice to thin.. Roasted red peppers may be blended in or
chopped and added after blending Serve with pita bread, pita "chips" or raw veggies. Best if made ahead to allow flavors to develop..

Kathy: Try this with sliced cucumbers and dill in a pita pocket for a refreshing summer lunch.

Tom: Hummus is great stuff - good as a dip, and fantastic on a sandwich. It is good policy to confer with one's significant other before consuming, lest only one of you eat it only to find that the other would otherwise have been inclined to be smooching.
