In mixing bowl combine wet ingredients
1 cup oil
3 eggs
1 cup milk
1 tsp vanilla
mix well and set aside

In another mixing bowl combine dry ingredients
2 1/2 cups flour
1 1/2 cups sugar
1 1/2 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
1 box of instant vanilla pudding mix (5.1 oz)

In small bowl combine 1/2 cup of sugar and 1 tsp of cinnamon to sprinkle over mixture in loaf pans

preheat oven to 325
Combine dry and wet ingredients into mixing bowl. Grease 2 loaf pans with cooking spray. Pour batter evenly into pans (about 2 1/2 cups of batter per pan). Sprinkle cinnamon and sugar mix over top of both loaves. Bake for 1 hour or until toothpick comes out clean
