Shepherd's Pie Recipe

Bottom layer:
1 package Morningstar Farms crumbles, or 3 packages Boca crumbles
1 egg
1/4 c milk
1 c seasoned bread crumbs
3 tbsp. ketchup
1 tbsp Bragg's liquid aminos or 1 1/2 tsp. soy sauce

Filling:
3 cups of any steamed veggies (my kids like peas and corn) tossed with a little butter, salt and pepper
2-3 lbs potatoes, boiled and mashed with milk, salt, and pepper

Topping:
8 oz sharp cheddar cheese, grated

Directions:
For bottom: Thaw crumbles in microwave for 5-6 minutes, stirring halfway through. Meanwhile, cook and mash potatoes, and steam veggies. Mix with remaining ingredients, pat into greased medium casserole dish. Bake at 350º until it feels almost firm to the touch (about 30 minutes). When bottom is done, sprinkle hot veggies over it, spread hot mashed potatoes over all, and top with shredded cheddar. Bake another 20 minutes to melt cheese.
