1 Pound/16 oz Margarine
1 Pound/16 oz Castor Sugar
5 eggs
1 Pound/16 oz Self Raising Flour
Juice of an orange
2 handfuls of Desiccated Coconut

Directions:
Directions:
1. Cream Sugar and Margarine together
2. Mix eggs in a separate bowl and add a little at a time to creamed sugar and Margarine beating well or you can use an electric mixer.
3. Fold in flour a little at a time.
4. squeeze an orange and add juice to mixture
5. Add 2 handfuls of Desiccated Coconut
6. Grease cake tin and dust with a little flour
7. Add mixture to cake tin and bake for 30 minutes 180 degrees C (not sure what that is in American!!)
8. Leave to cool on cake rack. Turn out of tin once cool.
9. Make icing/frosting by pouring Icing Sugar into a bowl (I never measure mine, I just guess! Sorry!)
10. Squeeze a lemon add juice to Icing Sugar and mix together.
11. Pour onto cake, smooth over with knife and sprinkle some Desiccated Coconut over top of iced cake before the icing sets.

P.S This Recipe usually makes a big tray sized cake, a perfect size for feeding my family on a Sunday afternoon. So you can halve the mixture to make a small round cake.

I don't think I made this for Mumsie but it is something that I have made nearly every week for my family since I have come home to England and I think Mumsie would have loved it with a cup of tea!!
