1 lb chicken, chopped (or ground beef)
1 small onion, chopped
2 cloves garlic, minced
2 tsp. salt
1/2 tsp. pepper
1/2 - 1 T. mint leaves, crushed
6 oz. tomato paste
3 C. water
1 C. long grain rice
16 oz. bag classic cole slaw

Boil cabbage until tender (about 10 min.), drain. Cook chicken in large, deep fry pan with a little olive oil. Add onion & garlic, then everything else except rice. Bring to a boil. Add rice, lower heat, cover & simmer for 45 min. Serve with Lebanese flat bread.
