1 lb. mild Italian sausage - Isernos
1/4 lb. thinly sliced prosciutto
4 tbsp. butter
1/2 cup chopped fresh parsley
3 beaten eggs
1/2 cup freshly grated Parmesan cheese
freshly ground black pepper
spaghetti

Directions:
Directions:
First put on a pot of hot salted water with a splash of olive oil wait for full boil

Second in a non stick skillet melt the butter and pull sausage meat out of sausages made into small pieces brown evenly

Next chop up the parsley, beat the eggs and grate the Parmesan cheese-set aside

When the meat is brown and the water is boiling shred the procuitto and cook it in the sausage butter mixture and let it melt in-if you cook it too long it will get tough!!

Add spaghetti to water and cook al dente!!

When the spaghetti is cooked drain well--do NOT rinse!!! Put in large bowl and add meat mixture-do NOT drain meat mixture!!!

Add parsley, beaten eggs, fresh grated Parmesan, fresh ground pepper and serve immediately!!!

I always take a veggie peeler and add some nice big pieces of Parmesan on top and voila!!
