3 C Flour
1 tsp Baking Powder
1 tsp Baking Soda
1/2 tsp Salt
1 tsp Cinnamon
2 C Sugar
4 Eggs, at room temperature
1 C Canola Oil
2 C Zucchini
1/2 tsp Vanilla Extract
1 C chopped Walnuts
1/2 C Raisins, optional

Directions:
Directions:
Sift together flour, powder, soda, salt and cinnamon; set aside. Combine sugar and eggs, beat at medium speed 2 minutes, add oil slowly beating 2 to 3 min. Add zucchini, vanilla and nuts. Blend well. Fill muffin cups 2/3 full. If not using paper muffin liners, you must butter muffin tins. Bake at 350º for 15 minutes.
