12 large peaches
1 C sugar - divided
1/3 C flour
Cooking spray
1 t orange rind
1/3 C orange juice
1/4 C butter
1/4 t cinnamon
3 egg whites
9 slices hearty bread
2 T sugar

Directions:
Cut an X on the bottoms of the peaches. Fill a large pan with water and bring to a boil. Immerse the peaches for 20 seconds, and plunge into ice water. Take the skins off. Slice the peaches. Preheat overn to 350º. Combine peaches, 3/4 c sugar and flour in a 13 X 9 baking dish - sprayed with Pam. Let the peaches stand 30 minutes.
Combine 1/4 c sugar, orange rind, orange juice, butter, cinnamon and egg whites in a shallow bowl, stirring with a whisk. Trim crusts from bread; cut each slice into 2 triangles. Dip bread triangles in the orange juice mixture; arrange on top of peach mixture. Sprinkle sugar over bread. Bake at 350º for 45 minutes or until golden.
