1.2 Cup Italian breadcrumbs
2 TBsp grated Parmesan cheese (you can use Romano for less calories!)
1/8 tsp black pepper
2 egg whites
2 medium zucchini thinly sliced

Directions:
Directions:
PREHEAT oven to 475º

Mix dry ingredients in one bowl. Put egg whites in separate bowl. Slice zucchini into coins (1/8" to 1/4" thick)
Dip zucchini in egg white, then in dry ingredients and place on greased cookie sheet.

Spray with Pam

Bake for 5-10 minutes or until golden brown.
