1 c. walnuts
4 eggs
2 c. sugar
1 c. vegetable oil
3 1/2 c. flour
1 1/2 tsp. salt
1 tsp. cinnamon
3/4 tsp. baking powder
2 c. zucchini, grated, unpeeled
1 cup raisin
1 tsp. vanilla
1 1/2 tsp. baking soda

Beat eggs, add sugar gradually, then add oil. Combine dry ingredients and add alternately with zucchini. Stir in raisins, walnuts and vanilla. Grease 2 regular loaf pans. Bake on lowest rack at 350 for 55 minutes. Turn out after 10 min. Loaves may be glazed with powdered sugar.
