The artist formerly known as Prince
1/4 teaspoon cayenne pepper
3 small to medium ripe Avocados, pitted and scooped from the skins with a large spoon
1 cup plain yogurt
1 tsp coarse salt
2 plum tomatoes, seeded and chopped
2 chopped scallions
Romain Lettuce

Preheat a grill pan or indoor grill or prepare outdoor grill. Drizzle grouper on both sides with EVVO. Season with salt and pepper to taste. Grill fish 5 - 6 minutes on each side until opaque. Squeeze lime juice over fish and remove from heat. Flake fish into large chunks with a fork.

While fish is cooking, combine avocado, lemon juice, cayenne pepper, yogurt and salt in a blended or food processor. Process until smooth. Remove guacamole to a bowl and stir in tomatoes and scallions. Shred lettuce and reserve.

When fish comes off the grill, heat tortillas. To assemble, pile some fish chunks onto the tortilla and slather in guacamole sauce. Top with the shredded lettuce, fold tacos over and eat.
