1 Tablespoon olive oil
6 shallots, peeled and quartered
3 pints grape tomatoes
Kosher salt and pepper
1/2 cup dry white wine
2 Tablespoon capers

Directions:
Directions:
1. Heat olive oil in large skillet over medium heat. Add the shallots and cook, stirring occasionally, until they begin to soften (about 4-5 minutes).
2. Add tomatoes, 3/4 teaspoon salt, and 1/2 teaspoon pepper. Cook, stirring, until a few of the tomatoes begin to burst (about 3 minutes).
3. Add white wine and cook until nearly evaporated (about 4-5 minutes).
4. Stir in capers. Serve warm.
