1 c. uncooked wild rice
5 1/2 c. chicken broth
Juice of 1/2 lemon
1 chicken breast (2 halves) cooked, cooled and cut into bit size pieces
3 green onions, sliced
1/2 red pepper, diced
2 oz. sugar pea pods, cut into 1 in. pieces
1 c. cashews
Dressing:
2 large cloves garlic, minced
1 tbsp. Dijon mustard
1/2 tsp. salt
1/4 tsp. sugar
1/4 tsp. freshly ground pepper
1/4 c. herb vinegar
1/3 c. olive oil

Directions:
Directions:
Rinse wild rice. Combine with chicken broth in 3 qt. saucepan. Cover and bring to boil. Reduce heat and simmer for 45 min., drain. Cool in bowl. Add lemon juice, chicken, onion, and red pepper. Blend all dressing ingredients and toss with rice mixture. Refrigerate at least 2 hours before serving. Stir in pea pods and cashews.
