1 c. cornmeal
1 T. sugar
1 T. baking powder
1 tsp. salt
1 egg
Buttermilk

Directions:
Directions:
Combine dry ingredients. Add egg and enough butter milk to make a batter. Pour into a greased small iron skillet and bake at 450º - 500º for 10-15 min. or until top is a little browned.

For a crisper crust: melt the shortening in the skillet in the oven so that it sizzles when you pour in the batter.
