6 membrillos sabrosos grandes
1 ½ taza de azúcar
2 palitos de canela

Se lavan los membrillos quitándoles sólo las 2 puntas. Después sin sacar las semillas, se cortan en rodajas de 1 ½ cm. de grosor en el sentido del limón. Con cuidado se retiran las semillas y éstas con las 2 puntas de los membrillos y los palos de canela se hacen hervir con 6 tazas de agua a fuego lento hasta que reduzca a la mitad.

Mezclar bien el azúcar con las 3 tazas del líquido obtenido. En una cacerola amplia se colocan cuidadosamente las rodajas de membrillo, una al lado de la otra, las demás encima de las primeras con el líquido azucarado.
Dejar cocinar sin mover, sólo agitando toda la cacerola de vez en cuando para que no se quemen y se vayan calando a fuego lento destapado. A mitad del cocimiento voltearlas con mucho cuidado o cambiarlas de lugar hasta que tomen color guinda, 2 hrs. o más.
