French Holiday Truffles Recipe

1/3 C. whipping cream
8 oz. semi-sweet baking chocolate, chopped
1/3 c. butter, softened
unsweetened cocoa
Chocolate and vanilla candy coating, melted

Directions:
Directions:
1. In 2-qt.saucepan combine whipping cream and chocolate. Cook over low heat, stirring occasionally, until chocolate melts (7-9 min.) Remove from heat. Stir in butter until melted and creamy.

2. Cover; refrigerate until firm (2 hr. +). Dust hands with cocoa or powdered sugar. Working quickly, shape 2 tsp. of mixture into a balls, roll in cocoa or powdered sugar. (Truffle mixture will be soft, repeat dusting hands to make shaping easier or use small ice cream scoop to form balls.)

3. Refrigerate truffles until firm (45min. +). To coat truffles, use a spoon or wooden pick to dip truffles into melted candy coating; let excess drip off. Place dipped truffles on waxed paper until coating is hard. If desired, to decorate, dip truffles in different color coating. Store in tightly covered container in refrig.
