2 1/4 c. flour
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. soda
3/4 c. shortening
1 c. sugar
2 eggs
2 Tbsp. milk
1 c. chopped pecans
1 c. chopped dates
1/3 c. maraschino cherries
2 1/2 c. cornflakes, crushed

Preheat oven to 375º. Sift together flour, baking powder, salt and soda. Cream shortening and sugar. Blend in eggs. Add milk and vanilla. Blend in sifted dry ingredients. Mix well. Add pecans, dates and maraschino cherries. Mix well. Shape a level Tbsp. of dough into a ball. Roll each ball in the crushed cornflakes. Place on greased cookie sheet. Top each cookie with 1/4 maraschino cherry. Bake for 10 to 12 minutes. Do not store till cool.

I added this recipe in memory of my mother who passed away May 1994 of pancreatic cancer. This was her favorite cookie.
