4 cups diced raw potatoes
½ cup chopped celery
½ cup chopped onion
3 cups whole milk
2 tbsp. butter
3-4 parsley stems and leaves
Salt and pepper to taste

Directions:
Directions:
Cut potatoes, celery, and onions and put in 1 quart of water.
Boil approximately 30 minutes or until the potatoes, celery, and onion are soft but not mushy.
Drain and reserve liquid.
Allow liquid to reduce over medium heat until almost gone, leaving approximately ¼ cup.
Add 3 cups of whole milk (not 2%), butter, salt (approximately 1 ¼ to 1 ½ teaspoons), white pepper to taste, and parsley stems.
Allow the soup to barely simmer a few minutes for the flavors to blend.
Remove parsley stems. Taste for salt and mix in parsley leaves that have been chopped fine.
