3-4 lb roasting hen 1 medium onion chopped 1 c flour 1 t salt 3 c hot water 2 t chili powder
Cut chicken into pieces. Roll in flour to which salt and chili powder have been added. Brown onion and chicken in large skillet or Dutch oven. Pour water over top; simmer for 20 minutes. Cover and bake at 350º until tender (1 ½ to 2 hours).
