3 Tbsp. olive oil 1 medium onion (diced) 1 can green chilies, drained 1 can chicken broth 3 Tbsp. flour 2 to 3 boneless chicken breasts (cooked & diced) 2 cans great northern beans (do not drain) 3 tsp. ground cumin
Saute onions and chilies in olive oil. Add flour and chicken broth; cook until mixture thickens. Stir in cumin, beans and chicken. Simmer for about 30 minutes. Serve with a spoon of sour cream and shredded cheese.
