2/3 c. onions 2/3 c. green bell peppers 2 tsp. minced garlic 1 tsp. ground cumin 2 1/2 c. chicken broth 1-15 oz. can pumpkin 1-15 oz. can beans (drained & rinsed) 1-14.5 oz. can diced tomatoes, drained 2 to 3 boneless chicken breasts (cooked & diced) salt & pepper to taste
Saute onions and peppers in olive oil, add all ingredients together and cook on low-medium heat until flavors are blended. Serve with a scoop of sour cream, shredded cheese and corn/tortilla chips.
