1/2 c. Butter (melted)
2 onions (chopped)
1 lb. Mushrooms (fresh & sliced)
1 box (lb) Pearl Barley
1/2 c. Sliced Pimento
3-1/2 c. Chicken Stock
salt & pepper (to taste)

Directions:
Directions:
Saute Onions and mushrooms in butter until tender. Add Barley. Cook until lightly browned. Remove from heat; add pimentos.
Combine chicken stock, salt & pepper (to taste) mix into casserole dish. Cover and bake at 350 for 1-1/2 hours or until liquid is absorbed. If barley seems dry, add remaining stock.
