1 3/4 cups chocolate wafer crumbs
1/3 cup butter, melted
1 Tbsp. sugar

Filling:

3 Tbsp. cornstarch
1 Tbsp. unsweetened cocoa powder
1/4 tsp salt
1 cupt half and half
1 1/4 cups milk
1 cup sugar
4 oz. unsweetened chocolate
2 Tbsp. butter
1 tsp. vanilla

Topping:

2 cups heavy cream
2 Tbsp. sugar
1 tsp. vanilla

Preheat oven to 350º Coat 9 inch pie plate with cooking spray. Combine ingredients and press into pie pan. Bake until set, about 10 minutes. Cool. You could use your favorite graham cracker crust recipe, but the chocolate wafers make this really good. For the filling: In bowl, whisk cornstarch, cocoa powder, and salt. Whisk in half and half. In saucepan, heat milk, sugar and chocolate over medium heat, stirring, to melt the chocolate. Whisk in half and half mixture. Cook, whisking, until filling begins to bubble. Cook, whisking, until very thick, 1 minute. Off heat, whisk in butter and vanilla. Spread in prepared crust. Cover with wax paper. Chill at least 4 hours.
Whip cream, sugar, and vanilla. Spread over pie.
