1 16 oz. pkg. bow tie pasta
1/2 cup finely chopped fresh cilantro
8 green onions, sliced
1 lg. cucumbers, coarsely chopped (about 1-1/2 cups)
2 lg. tomatoes. seeded & coarsely chopped (2 cups)
1 sm. red pepper, coarsely chopped (about 1/2 cup)
1 sm. yellow pepper, coarsely chopped (about 1/2 cup)
1 green Anaheim chili, seeded & chopped
1 2-1/4 oz. can sliced ripe olives, drained

LIME VINAIGRETTE:
1/2 cup tomato juice
1/4 cup olive/vegetable oil
1/4 cup lime juice
1/2 tsp. salt
2 cloves garlic, crushed

Directions:
Directions:
Cook pasta as directed and drain. Rinse in cold water. Drain. Mix pasta and remaining ingredients in large bowl, except vinaigrette. Pour vinaigrette over salad and toss.
