1 1/2 c. brown sugar
2/3 c. cooking oil
1 egg
1 c. buttermilk
1 tsp. baking soda
1 tsp. salt
2 tsp. vanilla
2 1/2 c. flour
1 1/2 c. thinly sliced rhubarb
1/2 c. chopped nuts
1 tsp. cinnamon
1/2 c. brown sugar

Directions:
Directions:
Add sugar, oil, egg, buttermilk & vanilla and mix well. Add dry ingredients to mixture. Fold in rhubarb, then nuts. Place into 2 greased & floured bread pans. Mix 1 tsp. cinnamon and 1/2 cup brown sugar and sprinkle on top. Bake at 325 for 45 minutes.
