1 lb. hamburger
1/2 c. chopped onion (1 medium)
1/2 c. chopped green sweet pepper
1 clove garlic, minced
1 tbsp. cooking oil
1 28-oz. can tomatoes, cut up
3/4 c. long grain rice
1 tsp. sugar
1 tsp. chili powder
several dashes bottled hot pepper sauce
1/2 c. shredded cheddar cheese, optional

In a large skillet cook hamburger and drain. Add onion, sweet pepper, garlic and oil. Cook until tender. Stir in undrained tomatoes, uncooked rice, sugar, chili powder, hot pepper sauce, 1/8 tsp. pepper, and 1 c. water. Bring to boiling; reduce heat. Cover; simmer for 20-25 minutes or until rice is tender and most of the liquid is absorbed. If desired, sprinkle with cheese.
Makes about 5 cups.
