1/2 lb. extra sharp cheddar, shredded, at room temperature
1/2 tsp. salt
2-1/4 c. flour
pecan halves
2 sticks margarine, at room temperature
1 egg, beaten

Directions:
Directions:
Mix cheese, salt and margarine with a mixer. Add flour and work into cheese mixture with a spoon or by hand. Roll into balls the size of a hickory nut. Dip the top of the ball into beaten egg, flatten and top with a pecan half. Bake at 350 F for 15 minutes. Allow to cool on cookie sheet 2-3 minutes for crispier wafers.

This recipe comes from Katy Armstrong. Can be served warm or room temperature. Be sure to use extra sharp cheddar or wafers will be quite tasteless. Makes 5 dozen.
