2 tbsp creamy peanut butter
4 chicken breasts or drumsticks
1 tbsp + 1 tsp honey
1/2 c. plain dried bread crumbs
1 tbsp hot pepper sauce or Louisiana buffalo wing sauce
1 tsp paprika
1 tbsp soy sauce
1/8 tsp ground cayenne pepper
1 tbsp chicken broth (can use bouillon cubes)
1-2 garlic cloves, mashed to a puree

Preheat oven to 400º and line a baking sheet with foil. Spray foil with non-stick cooking spray. Remove chicken skin (if any) and set aside. In a large bowl combine peanut butter, honey, hot pepper sauce, broth, garlic and soy sauce. Whisk until smooth. In a gallon resealable bag, combine bread crumbs, paprika and cayenne pepper. Add the chicken one at a time, to peanut sauce and thoroughly coat. Shake in crumb mixture. Do this will all the chicken. Bake for 20 minutes and turn chicken over carefully. Bake another 20 minutes. Serve

This may sound spicing but it's not. It tastes great! I used to make this when on Weight Watchers. Each piece is 6 points, in case you're counting.
