"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

3 Tbsp. flour
1/2 tsp. salt
1/4 tsp. pepper
4 skinless half chicken breasts
2 Tbsp. olive oil
1 med. onion, coarsely chopped
1 Tbsp. margarine/butter
1 cup chicken broth
3 Tbsp. lemon juice
1/2 tsp. thyme
Lemon wedges
2 Tbsp. chopped parsley

In plastic bag, combine flour, salt, & pepper and shake to mix. Add chicken to coat. Remove & save extra flour.

In large skillet, warm 1 Tbsp. oil over medium heat. Add chicken & brown on one side - about 5 minutes. Add remaining oil, turn chicken, brown well on 2nd side - about 5 minutes. Set chicken aside on a plate. Add margarine and onion to skillet. Stir in reserved flour & cook, stirring until well blended - about one minute. Add broth, 2 Tbsp. lemon juice and thyme; bring to a boil - stirring constantly. Return chicken to skillet, reduce heat to medium low and cover skillet. Cook about 5 minutes.

Divide chicken among 4 plates. Stir in remaining 1 Tbsp. lemon juice into skillet and pour over chicken. Serve with lemon wedges and sprinkle with parsley.
