Boneless chicken breasts - cut into bite-sized pieces
1 lg. red onion - chopped
3 15-oz. cans Great Northern Beans - drained
1 16-oz. jar El Torito salsa - Medium
40 oz. chicken broth
2 tsp. cumin seed
4-8 oz. (or more) jack cheese, grated
Cilantro - chopped
Tortilla chips - crushed

Directions:
Directions:
Season chicken with salt and pepper. Cook in oil. Saute onion in a little olive oil. In large kettle, combine chicken, onions, beans, salsa, cumin and broth. Cover and simmer for 1-2 hours. Stir in a part of cheese at the end. Add cilantro.

To serve, sprinkle with more cheese and tortilla chips.
