Place roast on cookie sheet and pat dry with paper towel. Salt, pepper and garlic salt the entire roast heavily. The more you put on the better it will taste. Put the fat on the bottom of the roast pan than place the roast in the center of the pan. Depending on the size of your roast bake on 325.
4-5lbs bake for 3-4 hours until fork will go all the way into meat easily. When the roast is done remove all fatty meat from pan so you can make the gravy. Gravy: Mix flour and cold water than add gradually so there are no lumps.
