2 cups frozen hash browns
1 cup cooked ham - diced
1/2 cup chopped green onion
6 eggs
1 cup cheddar cheese

Directions:
Directions:
In large skillet, saute potatoes, ham and onion until potatoes are tender. Beat eggs in bowl and add to skillet. Cook, stirring occasionally until eggs are set. Gently stir in cheese. Salt and pepper to taste.

I've also substituted sausage for the ham.
