2 tsp. olive oil
2 T. butter
3 c. yellow onions, diced
1 c. celery ribs, diced
3 garlic cloves, minced
1 tsp. dried basil
1 tsp. ground cumin
2 tsp. sea salt
1 tsp. freshly ground black pepper
8 c. chicken broth
2 med. sweet potatoes, peeled & chopped
2 jalapeņo peppers OR 2 chipotle pepper or 2 pepperchini's
3 bay leaves
3 c. shredded chicken
1/2 c. chopped fresh cilantro
1/2 avocado chopped
tortilla strips

Directions:
Heat oil & butter in large heavy saucepan over medium heat. Add onion & cook, stir occasionally about 10 minutes, add celery & cook another 10 minutes, add garlic, peppers, cumin, basil, salt and pepper. Cook about 1 minute. Add sweet potatoes, broth, chicken and bay leaves; bring soup to a low boil & simmer about 40 minutes. Remove bay leaves before serving. Top with cilantro, chopped avocado and or tortilla strips.
