12 egg whites, room temperature
1 1/2 t. cream of tartar
1 c. sugar
1 t. vanilla
1 c. plus 2 Tbsp. Softa-Silk cake flour, sifted
3/4 c. sugar

Directions:
Directions:
Beat egg whites till foamy. Add cream of tartar and beat to soft peaks. Sprinkle 1 cup sugar and beat till blended. Add vanilla. Fold in flour and sugar mixture with spatula. Spoon into angel food cake pan. Run a knife through the batter to get the air bubbles out. Bake at 375º for 35-40 minutes. Invert till cool. For chocolate angel food, replace 1/4 c. flour with 1/4 c. cocoa.

Be sure that there is no grease on any of the utensils that you use for this cake. The egg whites won't whip as high as they should.
