Salsa:
2 large tomatoes seeded, coarsely chopped
1/2 c finely chopped red onion
1/4 c chopped fresh cilantro
1 tbl finely chopped jalapeno pepper
1 tbl lime juice
1/8 tsp salt
8-10 slices Oscar Meyer turkey bacon
light mayonnaise
4 - 10 inch whole wheat tortillas
2 c fresh baby spinach

Directions:

1. In medium bowl combine tomatoes, onion, cilantro and jalapeno pepper.
Stir in lime juice and salt
Set aside
2. Cook bacon until very crispy. Drain on paper towels. Cut bacon into large pieces
3. Spread mayonnaise on tortillas; top with fresh spinach. Scoop salsa onto spinach. Top with bacon. Roll up tortillas and cut in half

Don't use Jenny-O turkey bacon because it won't get crispy. You can substitute real bacon if you would rather.
