1 package Trader Joe's Roasted Potatoes with peppers and onions
1 package Trader Joes's Soy Chorizo
6 eggs
1 c. milk
2 c. Mexican Blend shredded cheese
optional: salsa, guacamole or sliced avocado, sour cream

Directions:
Directions:
Preheat oven to 350º. Prepare potatoes in skillet according to package directions. Remove chorizo from casings and add to pan, breaking it up into small pieces. Remove pan from heat, beat eggs with milk and add to chorizo mixture with 1 1/2 cups cheese, mixing well. Transfer mixture to a greased 9 x 13 baking dish and top with remaining cheese. Bake for 25 minutes or until center is set.
