1 lb. ground meat
1 pkg. taco seasoning mix
1 can ranch style beans
1 small bell pepper
1 small onion
2 garlic cloves
2 c. Colby-Jack cheese (grated)
1 pkg. Jiffy corn muffin mix
1 can Mexicorn, drained
Directions:
Directions:
Preheat oven to 375º. Brown and drain meat. Add taco seasoning and 1/4 c. water. Add beans, pepper, onion, garlic and 1 c. cheese. Spread in bottom of small square baking dish. Mix corn muffin mix according to package directions. Mix in corn and remaining cheese. Spread over meat mixture and bake for 20-25 minutes until golden brown. To double, bake in 9 X 13 dish.
