1 bag of Green Giant frozen extra sweet corn (thawed and dried with paper towels) or fresh cooked ears shucked
2 cloves of fresh garlic minced
1 red bell pepper diced
1bunch scallions diced
1 can black beans rinsed
1small red onion diced
Freshly chopped cilantro (as desired) I use about a bunch. I love it!
1 large or 2 small avocado diced
Juice 1 large lime (squeeze over diced avocado)
1 tsp. Cumin
Drizzle with Balsamic Vinaigrette Dressing to taste
Kosher Salt and Coarse ground pepper to taste

Mix all ingredients in large bowl and serve with corn chips…YUMMY!~
