8 C spinach leaves
1 avocado, thinly sliced
1/2 C red onion, thinly sliced
1 C pomegranate seeds or 1/2 C dried cranberries
Dressing:
4 Tbsp. cranberry juice concentrate
4 Tbsp. rice wine vinegar
1 1/2 tsp. Dijon mustard
1/4 tsp. pepper
1/2 C canola or vegetable oil

Directions:
Directions:
Stem spinach and tear into bite sized pieces, place in large bowl and top with avocado and onions. Mix all dressing ingredients in container and shake until well-blended. Drizzle over salad. Sprinkle with dried cranberries or pomegranate seeds and toss.
