1 pkg. boneless skinless chicken breasts (4)
1 large yellow onion
1 large green bell pepper
2 tbsp. veg. oil
1 can Rotel tomatoes
2 c. water
2 c. instant rice
2 c. shredded Monterey Jack cheese
Paprika
Black Pepper

Directions:
Directions:
Slice boneless chicken breasts into strips. Sprinkle with black pepper and paprika. Dice yellow onion and green bell pepper. Heat oil in skillet and saute onion and bell pepper. Add seasoned chicken to mixture. Add Rotel and bring to a boil. Add instant rice and water. Cover and simmer about 5 minutes, until rice absorbs liquid. Remove from heat and add shredded Monterey Jack cheese to top.

Serve with salad and crescent rolls.
